I’m missing the lovely sunny weather, so this morning to cheer the day I just had to make a mango lassi. I bought some mangoes from Walthamstow Market – 4 juicy mangoes in a box for £4. This recipe could serve four small glasses or two greedy large ones!
2 mangoes (honey mangoes preferably)
250ml of milk (we used semi-skimmed)
250ml of yogurt
Put all the ingredients in a blender and wizz for a few seconds until smooth. You can use any plain yogurt but we love Turkish yogurt from the International Supermarket on the High Street, E17. We buy the lower 3.5 per cent fat ‘Anatolian style’ one with live yogurt culture.
