Chanterelle Mushrooms

This week we bought Chanterelle Mushrooms from the Lithuanian shop on Walthamstow High Street – Lituanica. This is a great local Eastern European shop where we buy black rye bread, salted fish, salami, sauerkraut and cheeses. It also does a range of salads, hot food and a deli and fresh meat counter.

It was less than £5 for half a kilo. After ages spent carefully cleaning them we cooked them quickly in a cream (well soya cream) sauce flavoured with thyme and black pepper. This went great through spelt wholemeal pasta served with asparagus and courgettes. It was a lovely mid-week supper.
