Sardine pate toasts

Just a quick post about an ultra quick afternoon snack we made this week. We had bought a massive bag of these little square toast crackers from one of the 99p shops in Walthamstow. If you get them in a Spanish or Italian deli they cost a few quid so these were a bargain.

We blitzed up with a food blender one tin of good quality sardines with all the tomato and olive oil from the tin. Into this we added a couple of finely chopped spring onions, a small handful of chopped coriander, and a pinch of Turkish red pepper flakes. And that’s it, simple as that – sardine pate toasts. It may sound like cheats cooking but by using all the fish, bones and all, you get a pate with a higher calcium content and all those healthy omega oils, plus no added mayonnaise or anything fattening. And it tastes deceptively indulgent.
